All courses are designed for practical purpose.

During the time when all businesses benefited from the blooming economy and performed well, businessmen were willing to spend $2,000-$3,000 on dishes with expensive shark fins and abalone.

Today, with the floundering economy, it has become more difficult to run the business. Since early 2002, more than a hundred restaurants have closed down. It is hard to speculate how many people in the food and beverage industry have lost their jobs.

With the Government's advocacy of enhanced productivity, lifelong learning has become essential for Hong Kong people.

Hong Kong & Kowloon Restaurant and Cafe Workers General Union (Day/Night) Vocational School is a professionally recognized cooking school with a long history of tradition. Besides classes for chefs, it also provides dim sum classes and bread and patisserie classes for students to choose.

Since each student is required to pass the exam to receive the certificate, the school emphasizes practical training in class. Therefore, our courses consist of teaching sessions alternating with practical sessions. This is to ensure that students are able to grasp the skills of cooking various kinds of dishes.

About 20 to 30 percent of our students had previous culinary experience; while another 20 percent of the students were restaurant owners; and the rest were people who did not know how to cook such as teachers, policeman, fireman etc.
